Two layers run over the same document: a statistical NER model for names,
organisations and places, and a deterministic regex library for structured identifiers.
A per-label policy then masks, hashes or redacts each hit.

This is a public demo on a small server. It stores nothing — no database, no queue,
no logs of what you type, and the hash salt is thrown away on restart — but that is a
